Chocolate Chip Banana Bread


Being sick last week didn't stop me from baking. I had to do something to make myself feel useful, and baking made me feel better. Plus I needed something to go with all the hot tea I was consuming, in a desperate attempt to make my throat feel better. This recipe is one of my favorites. I love how simple and easy it is and how wonderfully delicious it tastes warm. My middle daughter is already begging "please please make some more!"! I did double this so we had a loaf at home and my husband had one for work.

Chocolate Chip Banana Bread

1 1/3 cups of very ripe mashed bananas (about 2 large)
3/4 cup of sugar
1/4 cup of milk (I used skim)
3 Tablespoons vegetable oil (I substituted applesauce)
1/2 tsp. vanilla
3 eggs (I used Egg Beaters)
2 2/3 cups Originial Bisquick (I used the low fat version)
1/2 cups semi sweet chocolate chips

Preheat oven to 350 degrees. Spray a loaf pan with cooking spray.

Stir together bananas, sugar, milk, oil, vanilla and eggs in a large bowl. Stir in Bisquick and chocolate chips. Pour into pan.

Bake 50 to 60 minutes or until top bounces back when touched or toothpick comes out clean when inserted.

Cool for 10 minutes then remove the bread from the pan and cool further. Serve warm or cooled completely. Makes about 12 slices.

Sounds delicious. My favorite is cranberry nut bread, but chocolate in banana bread sounds interesting.

Cranberry nut bread sounds really good! I love cranberries. Any dessert that includes fruit is delicious.

Mmmm...I should think this would go very well with hot tea. Or with anything really. I do love breads like this warm from the oven. They always smell so good as they bake so that by the time they're done, you're ready to eat half the loaf. Not that I've done that or anything. Ahem. Well...not often anyway. :-)
