Reese's Peanut Butter Cup Ice Cream


After getting the confirmation this week that I definitely have skin cancer (the very curable kind, thank God!), I needed a bit of a pick me up. Something rich, chocolatey and very satisfying. And it was going to have to be good enough to get my mind off the upcoming surgery. Well, this ice cream certainly did get my full attention! The basic recipe is easy to adapt to whatever candy or other additions you prefer. You can add small marshmallows, nuts or other chopped candy if you don't like Reeses, but who doesn't like Reeses? :)

Reeses's Peanut Butter Cup Ice Cream

2 1/2 ounces unsweetened chocolate
1 cup granulated sugar
1 cup milk (I used half and half to make it richer)
2 cups heavy cream
1 teaspoon vanilla
About 5 Reeses Peanut Butter Cups, chopped

In a 2-quart saucepan, heat chocolate, sugar, milk, cream until chocolate is melted. Add vanilla and cool. Pour the mixture into a blender and process until smooth. Pour into prepared ice cream maker and freeze according to manufacturer's directions. Just before done, add chopped Reeses (or other ingredients as desired).
Makes about 4 cups

I have been thinking about you as I go about my day. I am sorry it's cancer but it is amazing what they can cure nowadays so please stay positive and strong. I know you will because there is nothing better than peanut butter ice cream!

Debi- Thanks for your kind words. The support I've received since this diagnosis has been the best. But it means the most coming from my blog buddies, because you all don't know me face to face yet you are just as supportive as people who see me every day. That means the world to me.

I will keep everyone informed as I go. The surgery is in December so I will update as soon as that is over. Until then, I'll be eating as much chocolate as I can and sharing the recipes!
