Sweet Potato Pie




For those of you that requested a simple sweet potato pie recipe (ahem...you know who you are, Debi and Beth), here is my favorite. It comes from an Old Virginia Receipts recipe I have framed on my kitchen wall. I've tried to make other recipes, but this is the one I always come back to. I'm making it again this year for Thanksgiving. I wrote it out as it is written exactly in the recipe. I really don't talk like that, honestly!



Tidewater's Own Sweet Potato Pie

1 unbaked 9 inch pie crust
1 1/2 cups sweet potatoes, mashed
3/4 cup brown sugar
3 eggs, beaten
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 tablespoon butter, melted
1/2 tsp. vanilla
1 tablespoon lemon juice
1 tsp. lemon peel
1 cup light cream

Preheat the oven to 400 degrees. Combine sweet potatoes, brown sugar, spices and salt in a mixing bowl. Mix well! Fold in lemon juice and peel. Slowly, you hear, add butter, vanilla, eggs and cream. Make it smooth. Spoon into pie shell. Bake 45 or 50 minutes. Poke a straw in center....clean? Done!

Hmm. I might have to try that. I've never had sweet potato pie, though I have heard of it.

Anita- it's good! I hope if you decide to try it that you like it. I think of it as getting lots of Vitamin A while eating a large slice ;)

Anita, I bet you'll like it. It tastes like a mild pumpkin pie. Like pumpkin but much better!

Thanks for the recipe! It sounds easy and delish! I'll let you know how it goes. I just got the ingredients for pecan pie and believe it or not, key lime pie today. The key lime not for Thanksgiving. Just because I haven't had a good one in years and I spotted a can of Comstock key lime filling in the store today (I had no idea they made that) so I figured I'd try it!

Key lime pie sounds really good right now. All the fall flavors are great but for some reason every year I get a craving for citrus around this time.

I had no idea Comstock made a key lime filling. I'll have to see if I can find it. Let me know how the pie turns out!

Thank you, Mary Ann---it looks wonderful! I'll make it sometime after Thanksgiving, since I'm already making one of those pecan-topped sweet potato casseroles for my new son-in-law and I'm making persimmon pudding for dessert for our Thanksgiving meal.
