Nutella Cupcakes With Nutella Coffee Icing
10 Tbsps unsalted butter, softened
3/4 cup granulated sugar
3 eggs
1/2 tsp. vanilla
1 3/4 cups sifted all-purpose flour (sift then measure)
1/4 tsp. salt
2 tsp. baking powder
1/3 cup Nutella- you can add more if desired!
Preheat oven to 325. Line 12 muffin tin with paper liners.
Cream together butter and sugar until light and fluffy, about 2 minutes. Add in eggs, one at a time, until fully incorporated. Don't worry of the batter looks curdled. Add vanilla.
Stir in flour, salt and baking powder until thoroughly combined and no flour remains.
Fill each paper liner with batter, 3/4 full. Top each cupcake with approx. 1 1/2 tsps. Nutella.
Swirl Nutella and batter together with a toothpick, making sure to fold a bit of the batter up over Nutella. Bake 20-25 mins., until toothpick inserted into middle comes out clean (except for the Nutella). Remove cupcakes to a wire rack and cool completely.
Nutella Coffee Icing
4 tablespoons butter, softened
4 tablespoons Nutella
3 cups powdered sugar
2 to 4 tablespoons milk
2 teaspoon instant coffee
1 teaspoon vanilla
In a small bowl, combine 2 tablespoons milk with 2 teaspoons instant coffee and stir until coffee is dissolved.
In a separate bowl, combine butter, Nutella, sugar, salt, vanilla, and the 2 tablespoons of coffee-milk mixture. Mix well with electric mixer for at least 2 minutes, adding more milk as needed to make a fluffy spreadable frosting.
